INGREDIENTS
3 very ripe/ overipe bananas
3 large eggs
1 cup dark brown sugar
3/4 cup granulated white sugar
1/3 cup vegetable oil
1/2 cup melted butter/ margarine
1 tbs vanilla essence
1&3/4 cups of all purpose flour
3/4 cups cocoa powder
1 tsp cinnamon powder
1/2 tsp salt
1& 1/2 tsp baking soda
1 cup unsweetened dark chocolate chunks
PROCEDURE
-Pre-heat oven to 180 degrees C / 350 degrees F.
-Prep your loaf tin by coating with butter and dusting the walls with some cocoa powder. Tap out the excess cocoa powder. Alternatively you may line your loaf tin with parchment paper or use a non-stick spray.
- In a bowl mash together your bananas using a fork or a potato masher. Mash until a smooth consistency is gotten. Set aside.
-In a separate large bowl, whisk together your eggs for around 2 min using a hand whisk or fork. Whisk until your egg is bubbly and frothy.
-Add in your dark brown sugar and granulated white sugar and whisk in.
-Add in your vegetable oil, melted butter and vanilla essence. Whisk together.
- Next, add in your mashed bananas and whisk one final time. Set aside.
- In a large bowl, sift together your all purpose flour, cocoa powder, salt and baking soda. Mix everything evenly.
- Add in your dry ingredients to your wet ingredients and gently fold everything together using a wooden spoon or spatula.
- Finally, add in your unsweetened dark chocolate chunks and mix in gently with your wooden spoon or spatula.
-Pour your batter into your prepared loaf tin. Smoothen everything out with your wooden spoon or a spatula.
-Place into your pre-heated oven and bake for 50min-1hr. At 50 min insert a toothpicks or skewer into the center of your cake. If it comes out clean then your cake is done. If it doesn't come out clean keep baking for 10 more min as you check occasionally for doneness with a toothpick(skewer).
-Once done, remove from the oven and leave the banana bread to cool in the loaf tin for 20min before transferring to a cooling rack to cool completely.
-Enjoy with a glass of milk, coffee, tea or even with a scoop of ice cream if you are a crazy sweet tooth!
NOTE
Since this banana bread has chocolate chunks make sure to test the doneness of your bread in several spots as your skewer may not have come out clean because it may have come across melted chocolate.
