LEMON VISHETE RECIPE( A KENYAN CHRISTMAS SERIES)


Last day of 2020! After this cold morning I’m enjoying this lemon vishete with some ginger tea as I reflect on my year.


DRY INGREDIENTS

4 cups all purpose flour

1/4 tspSalt

1 tbs baking powder

1 &1/2tsp cinnamon powder

1 tsp cardamom powder

1/2tsp nutmeg

1/2 cup-1 cup granulated sugar(depending on your desired sweetness)


WET INGREDIENTS

1 beaten egg

1&1/3 cups milk


PROCEDURE

-Combine your dry ingredients into a large bowl.

- create a well in the center and add in your wet ingredients

- Begin to combine the dough with your hands before transferring to a clean dusted kitchen counter.

-knead the dough for 5-8min until dough is soft and supple

- Place dough in a bowl and cover with a kitchen towel/cling film and let rest for 30 min.

- Once dough has rested dust your kitchen counter with all purpose flour and roll out your dough flat until about 1/2 cm thick.

-Cut your rolled dough into small squares as you heat up some oil in a pan.

-once oil is hot add in your vishetes and cook on medium heat as you turn until they are nice and golden brown.

-Drain out the excess oil and serve hot!
