Growing up, pineapple crumble was one of my favorite desserts;still is. I always had it with custard for breakfast or had it with some ice cream for dessert! Oh yum!
In this recipe i decided to give it a twist and lace my pineapple in coconut cream and I loved it especially when I paired the crumble with vanilla ice cream!
Lets get into it!

Ingredients
2 cups chopped pineapple
2tbs. Coconut cream
1tbs. sugar
1/1/2 tsp. cinnamon powder
1 cup all purpose flour
2 tbs butter
Procedure
-Place your chopped Pineapple pieces in a non stick baking dish as shown below. Sprinkle 1 tbs. sugar over the pineapple to make it caramelise.
-Drizzle 2 tbs. coconut cream over the pineapple and mix in evenly.
-Sprinkle 1 tsp. cinnamon powder and give it one more mix. Set aside to let the pineapples absorb the flavours.
- As the pineapple is marinating, let’s get the crumble ready!
Pour 1 cup of all purpose flour into a large bowl.
- Add 2 tbs. of margerine/butter( they should be at room temperature ) and cream them together with your hands. You know your crumble is done when it resembles bread crumbs and falls through your hands like fine sand.
- Cover your marinated fruit with your crumble until fully covered. Sprinkle 1/2 tsp. cinnamon over your crumble before baking (This also helps give your crumble a beautiful brown colour once done!)
-Pre heat your oven to 200 degrees Celsius/ 390 degrees Fahrenheit and bake on the middle rack for 40- 45 min.
-Serve when hot with custard or ice cream!
