POWDERED SUGAR MINI DOUGHNUTS



On my free days I like to relax and catch up on my favorite shows! If you're like me then you can't watch anything without eating. This week for my binge day I made this delicious powdered sugar mini doughnuts. Since they are mini you can have as many as you'd like right?! This recipe is fairly simple enough to follow and the fruits of your labor will be ever so rewarding! Kujeni tupike!



PREP TIME: 25MIN
RISE TIME: 2HRS 15 MIN
COOK TIME: 2-3 MIN PER ROUND
MAKES 14-18 MINI DOUGHNUTS


INGREDIENTS(Doughnuts)

  • 4 cups all purpose flour

  • 1 cup warm milk

  • 2tbs. Active dry yeast

  • 1/3cup+1 tsp granulated sugar

  • 2large eggs

  • 1/4 cup melted butter/margarine

  • 1/2 tsp. Salt

  • Vegetable oil for frying

INGREDIENTS (Powdered sugar)

  • 1 cup icing sugar

  • 1 tsp. Cinnamon powder


PROCEDURE

-In a large bowl mix together your icing sugar and cinnamon powder. Set aside for later.

-In another large bowl mix together your milk, 1tsp. Sugar and yeast. Leave to sit for 10min to proof.

-Whisk together your eggs, melted butter,1/3cup sugar, and salt in a large bowl. Add this to your yeast mixture and stir until well combined.



-Sift your all purpose flour into a bowl. Add 2 cups of your flour first into your wet ingredients and mix well with a wooden spoon until all the flour has been incoporated.

- Add your remaining 2 cups of flour and continue to mix with your wooden spoon until a dough is formed.



-Dust the surface of your counter with all purpose flour and begin to knead your flour for 8-10min until a soft supple dough is formed.

-Grease a large bowl with some oil and place in your dough. Cover your bowl with cling film or a damp kitchen towel.

- Leave your dough to rise and double in size for 2hours in a warm place of your kitchen.



- Once your dough has risen, dust your counter surface with all purpose flour and roll out your dough to about 1/4 inch thick. Using a cutter/plastic cup of 4-5 inches wide cut out circular shapes.

- Using a small bottle top or cutter cut out a hole in the center of your shapes.(With the dough that remains after cutting out your shapes; knead together and roll out again to cut out more shapes! You can only do this once as your dough may become tough.)

-Place your doughnut shapes on a plate greased with oil (to prevent sticking) and cover with a kitchen towel. Leave to rise covered for 15min.



-Heat up enough oil to deep fry in a pan. Add in your doughnuts a few per round and deep fry for 2-3 min till golden brown on both sides. -Remove your doughnuts from the oil and strain out any excess oil.

- While still hot roll your doughnuts in your powdered sugar mixture. Shake off any excess powdered sugar, serve on a plate and enjoy with a hot cup of tea or coffee!
