BEEF TACOS WITH HERBY GREEK YOGHURT DRESSING


Someone somewhere once said that tacos are the stereotypical Mexican dish. Tacos by definition are corn or flour tortillas which wrap or fold around a typically meaty filling. They’re then usually topped with cebollita y cilantro (diced onion and coriander), before being modified with the optional spicy salsas, guac, radish, squeeze of lime, dressing and other extras of your choosing. This week we are making amazing beef tacos topped with red cabbage, avocado, cilantro and my glorious herby Greek yoghurt dressing!

COOK TIME: 12 MIN
MAKES 6 TACOS

INGREDIENTS (BEEF)

300g minced beef

1 red onion finely chopped

3-5 garlic cloves minced

1 tsp cumin powder

1 tsp coriander powder

1 tsp garam masa

1/2 tsp red chilli powder

1 tsp dried oregano

1 tbs tomato paste

1 medium red bell pepper chopped into strips

1 medium green bell pepper chopped into strips

salt and pepper to taste

1 tbs veg oil


INGREDIENTS (HERBY GREEK YOGHURT DRESSING)

1cup plain Greek yoghurt

3 tbs fresh lemon juice

1 tbs vegetable oil

1 tsp dried oregano

pinch of salt and pepper to taste


OTHER

6 tortillas

1 large avocado

1/2 small red cabbage

cilantro leaves ( dania)



PROCEDURE (BEEF)

-Add 1 tbs vegetable oil to a non stick pan and heat it up.

-Add in your onions and sauté for 2 min or until they begin to brown.


-Next add your minced garlic and sauté for another 1 min.

- Add in your minced beef, salt, black pepper and all your spices. Cook until all your minced beef has browned as you stir occasionally.


-Once browned, add in your tomato paste. Stir and cook for 1 min.

- Add in your green and red bell peppers. Stir and cook them for around 2 min until they have slightly softened.


-Lastly add in your dried oregano and cook for 1 more minute. Remove from the heat and begin assembling your taco.


PROCEDURE(HERBY GREEK YOGHURT DRESSING)

-Add all your ingredients into a bowl and stir.


ASSEMBLY PROCEDURE


-Heat up your tortillas in a large pan for 30 sec per side or microwave them for 30 sec total. If you want a charred looking tortilla; heat it over an open flame using tongs for a few seconds or until charred marks appear.

- Begin to assemble your taco in this order:

1.Tortilla

2. Red cabbage

3.Beef

4.Avocado

5.Cilantro/ dania/ coriander leaves

6.Herby Greek yoghurt dressing


NOTES:

-Sterilise your red cabbage by soaking it in warm salty water for 15 min. To serve you may shred it using a grater or chop it thinly using a knife.

- Strive to have your Herby Greek yoghurt and cabbage prepped before you begin cooking your beef so that your beef is still hot when you are assembling your tacos.

-Lastly feel free to experiment and tweak things here and there to suit your liking!
