SMOKED ROASTED CHICKEN TANDOORI



If you love Indian/ Asian cuisine put your hands up! Well me too! Have you tried chicken tandoori? If you haven't today is your lucky day! This smoked chicken tandoori will surely become a personal favorite! It's Soo juicy, colourful and flavourful. Moreover it has an amazing smoked flavour that we all love. Let's get started!

COOK TIME: 1HR
MAKES: 1 SPATCHCOCKED CAPON CHICKEN

INGREDIENTS

-1 skinless spatchcocked chicken

-salt and pepper

-1tbs vegetable oil

-1 charcoal piece

(Marinade)

-200ml plain Greek yoghurt

-1 tbs ginger garlic paste( or 1tbs freshly grated ginger and garlic)

-2 tbs freshly squeezed lemon juice

-1 tsp garam masala

-1 tsp coriander powder

-1 tsp cumin powder

-1tsp red chilli powder

-2tbs cumin powder


PROCEDURE

-Mix together all your marinade ingredients.


-Make deep cuts all round the chicken. This helps the flavors of the marinade penetrate the chicken better.


-Add your marinade to your chicken in a large bowl and massage all round. Cover with cling film and marinate your chicken for at least 3hrs although overnight is preferred.


- Once your chicken has marinated it's time for grilling! Pre heat yourself oven to 200 degrees Celsius. Place your chicken on a baking tray lined with aluminum foil. Grill in the oven for 30min per side.

-Once your chicken is done place it in a large bowl or pot. Heat up a piece of charcoal until it glows red. Place your hot piece of charcoal in a metal tin/ container that has 1 tbs of vegetable oil in it.(This helps to produce the smoke for that smoky flavour. ) Cover immediately with foil paper or a fitting lid and leave for 2 min. open and serve your delicious smoked tandoori chicken!

Notes:

-Spatchcocked chicken is a whole chicken which has been flattened by removing the back bone and flattening the breast bone.This helps your chicken to cook evenly and reduces cooking time. If you do not know how to spatchcock your chicken yourself feel free to request your butcher to skin your chicken and spatchcock it for you.

-If you own a charcoal grill you may skip the process of smoking your chicken because your chicken will already absorb the smokey flavour from your charcoal grill while grilling. If using a charcoal grill monitor your chicken as you turn from side to side. Your chicken is ready once the juices run clear and it is no longer pink in the centre. This usually takes between 40min to 1 hr depending on your heat source so keep checking occasionally.

-Tip: Cook your chicken for the last 10 min on the highest part of your oven to give it a nice colour. Keep checking on it to make sure that it doesn’t burn.
