It’s valentines week! It’s a week where you get to celebrate and treat the people you love. This week my family is going to be my valentine #foreversingle. Whoever it is you want to treat this week... have you thought of a home cooked meal? Not only are they budget friendly but also serve as a good bonding time! Today we will be making a creamy garlic and mushroom farfalle pasta topped with Parmesan cheese. This meal is very simple and easy to make yourself at home and tastes just as good as any high class restaurant. Let’s get started!
PREP TIME: 5 MIN
TOTAL COOK TIME :20 MIN
SERVES 4
INGREDIENTS
200g Farfalle pasta
Pot of water
1-2 tbs butter/ margarine
2tbs vegetable oil
4 minced garlic cloves
300g. chopped button mushrooms
1 tbs mixed herbs
1/2 chicken cube
3/4 cup cooking cream
1 cup pasta water ( reserved from boiling pasta)
1/4 cup Parmesan cheese (optional)
Salt & pepper
PROCEDURE
-Season water in a large pot generously with salt and bring to a boil. Add in your pasta and cook for 8-10 min. Stir occasionally to prevent sticking.
-As your pasta is cooking you can begin to make your garlic & mushroom sauce. Heat up your butter and vegetable oil in a non stick pan or pot.
- Add in your garlic and sauté for 1 min on low heat until golden brown and fragrant.
- Next add in your chopped button mushrooms. Season with a very small pinch of salt and some pepper. Stir and sauté for 1 min as the mushrooms continue to soften.
- Add in your mixed herbs and chicken cube. Stir and continue to sauté your mushrooms until softened.
- Add in your cooking cream and pasta water and Parmesan cheese. Stir and simmer on medium heat for 5 min.
-By this time your pasta should be ready. Strain out the water from your pasta. Next you can add your pasta to your garlic and mushroom sauce and stir together. Alternatively you can serve them separately and drizzle your garlic and mushroom sauce over your pasta on your plate.
-Garnish with chopped coriander/ Mixed herbs and some Parmesan cheese. Enjoy!
