I love infusing my food with herbs. They really add a touch of freshness to any recipe! In this recipe we shall be making a delicious potato and bean stew with a herby touch from oregano and Coriander. This stew goes perfectly with rice and chapati! Now that we have our pre-boiled yellow beans let's get started.
SERVES 5
INGREDIENTS
2-3 medium sized Irish potatoes chopped
1 pack Nairobeans yellow beans
1 large red onion finely chopped
Handful chopped Dania(coriander) stems
1 tsp salt
1/4 tsp black pepper
4 garlic cloves minced
1 tbs freshly grated ginger
1 tsp cumin powder
1/4 tsp chilli powder
1 cup diced carrots ( small pieces)
3 medium sized tomatoes cubed
1 tsp dried oregano
1/2 tsp dark soy sauce
1/2 small capsicum cut into strips
2/1/2 cups water
Handful chopped dania (coriander) leaves
Vegetable oil for frying
PROCEDURE
- Heat up a frying pan halfway filled with vegetable oil. Add in your chopped potatoes and fry until golden brown and cooked. Remove from the oil and set aside.
- Reduce your oil to about 3 tbs. Add in your onion, Dania stems, salt and black pepper. Saute' for 2 min until softened and fragrant.
- Add in your garlic, ginger, cumin powder, chilli powder and chopped carrot. Saute' for 1 min on medium heat.
- Add in your chopped tomato, oregano and soy sauce. Stir and cook for 3 min on low heat till tomatoes have softened.
- Add in your pack of yellow beans and green capsicum (bell pepper). Stir.
- Add in your water and stir. Simmer on medium heat for 20 min.
-Lastly add in your potatoes and chopped dania (coriander) leaves. Stir and serve immediately.
