I couldn’t finish this Christmas series without all time favourite pilau. I like to make my pilau using the Jollof rice method to infuse more flavour into the rice. This is how I make it.
INGREDIENTS
250 g beef
____
For blending;
2 onions chopped
5 cloves of garlic chopped
2inch ginger chopped
____
3 TBS cooking oil
3 onions thinly chopped
1 & 1/2 tbs whole pilau mix( peppercorns, cumin seeds, cardamoms, cinnamon sticks)
2-3 Tbs tomato paste
3 peeled tomatoes
1tbs paprika
1 tsp garam masala
1 tsp coriander powder
4 cups washed basmati rice
5cups water
Salt to taste
PROCEDURE:
- Blend your onion, garlic and ginger into a paste and set aside.
- Brown your beef in a Hot non stick pot...remove one browned.
- in the same pot add in your oil and onions. Sauté onions until browned.
-Add in your blended onion, garlic &ginger paste and sauté for 1 min.
Add in your tomato paste, sauté for 1 min, add in your tomatoes and sauté for 2 min .
- add one cup of water, paprika, garam masala, coriander powder, 2 tap salt and cook down the tomatoes for 8min.
- Add in your rice and coat with your tomato base then add in tyour browned beef, the remaining 4 cups of cold water and stir.
- Taste for seasoning and adjust accordingly. Cover pot an cook on low heat for 30-40 min.
- fluff rice and cover for 15 min before serving . Enjoy hot!
