Fried rice has got to be one of the easiest lazy meals ever. Not only is it a creative way to revamp leftover rice but also it is something really quick yet delicious to make. If you are saying 'yes!' to yourself right now well I have even better news for you.

Today we are going to be making a delicious,simple and quick butter bean fried rice that is sure to tingle your taste buds. Let's get started!

PREP TIME: 5 MIN
COOK TIME: 8MIN
SERVES 2

INGREDIENTS

1 pack Nairobeans butter beans

2 cups cooked white basmati rice

1 red onion finely chopped

4 grated garlic cloves

1 tbs freshly grated ginger

1/2 cup diced carrots

Hand full of chopped dania(coriander) stems

Hand full of chopped dania(coriander) leaves

Hand full of chopped spring onion

1 tsp. salt

1/2 tsp. black pepper

1 tsp. cumin powder

1 tsp. cinnamon powder

1 tbs . turmeric powder

1/2 tsp. dark soy sauce

2 tbs. vegetable oil


PROCEDURE

-Leave your frozen pre-boiled butter beans do thaw on the counter for around an hour before cooking.

-Heat up your vegetable oil in a pan on medium heat

-Once hot, place in your onions, dania(coriander) stems and carrots. Add in your salt, black pepper and mix everything together.



-Saute' for 2 min until your onions have softened.

-Add in your garlic and ginger as well as your cumin powder, cinnamon powder and turmeric powder. Give everything a good mix and leave to saute' for 30 seconds on low heat to let your spices cook.



-Next add in your pre-boiled butter beans by Nairobeans and give everything a good stir. Leave your butter beans to warm up together with your other ingredients for around 1 min as you stir continuously to ensure that all the butter beans get warmed up.



-Add in your pre-cooked basmati rice and mix everything together evenly.

-Add in your dark soy sauce and mix into your fried rice evenly and leave to cook for 30 more seconds on low heat.



-Lastly add in your chopped dania (coriander) leaves and chopped spring onion into your rice and give it a final mix.



-Serve your rice when hot and enjoy!
