CHOCOATE CHIP AND OATMEAL DROP COOKIES! #DESSERT WEEK DAY 3!

I love me a good crunchy on the outside and chewy in the center drop cookie!
Drop cookies are a go to quick dessert to pull out on short notice because of how simple they are to make and how good they taste !
I made this drop cookies the other day ; It's safe to say they were so good, they barley lived to see the next day! Cookies may not be a traditional dessert but couple this bad boys with a cold glass of milk , milkshake , some tea or coffee and your'e in for a real treat!

INGREDIENTS

WET INGREDIENTS

1 egg

1 stick of butter/ 5 tbs. of margarine

3/4 cup of sugar

1 tsp. vanilla essence

2 tbs. honey




DRY INGREDIENTS


2 1/4 cups of all purpose flour

1 tsp. baking soda

1/2 tsp. salt

1 cup unsweetened dark chocolate compound chips

1/2 cup instant oats



PROCEDURE


Whisk your egg in a bowl until it is frothy ( thin white foam should appear at the top) and set aside .)


In a separate bowl cream together your sugar and butter/ margarine using a wooden spoon until well combined. cream them together by pressing them against the walls of your bowl until both ingredients are well mixed. ( Make sure your butter / margarine is at room temperature before starting)

Add in your whisked egg into the creamed butter and sugar and mix until well combined.

Stir in your vanilla essence and honey ( The honey helps to make the cookie chewy! )

Sift your all purpose flour, salt and baking soda into a bowl.


Add your sifted ingredients into your wet batter gradually as you mix in until you get a nice soft dough . ( The dough should not be tough because the cookies will come out quite hard . To avoid this do not knead the dough for too long to the piont that it becomes tough.)

At this point add in your chocolate chips and instant oats and mix in evenly.

(Keep your chocolate chips in the fridge before adding it to the mixture so that they hold their shape and not melt while mixing.)


Once all your cookie dough has been mixed evenly , measure one tablespoon of the cookie dough and roll it in your palms to form a ball. Place on a baking tray lined with parchment paper.

Keep on measuring and rolling cookie dough into balls until all the dough is used up.

When your done place your cookie balls in the freezer for about an hour . ( This helps them maintain their shape during baking. )


TIP:

Make cookie dough in bulk( you may double the portions for this) and freeze cookie balls in an airtight zip lock bag so that you always have them in handy when you're craving! Trust me when they are done you'll want more plus it saves on time the next time you want to make this cookies . They are good in the freezer for about one month!



Place the cookie dough on the counter to thaw for 20 min before placing in the oven.( If you bake them immediately from the freezer the inside of the drop cookie will not cook well.)


Pre- heat your oven to 180 degrees Celsius / 356 degrees Fahrenheit and bake cookies on the middle rack of the oven for 10 - 20 min or until cookies are golden brown.

Remove cookies from the oven and cool on a rack .

Serve with a tall glass of milk , milkshake, smoothie or a hot cup of tea/ coffee !
