For all you cake lovers this one is for you ! Today's #DESSERTWEEKDAY2 I made this amazing chocolate fudge cake , soaked in sugar syrup , and iced with chocolate ganache and chocolate shavings.

Ingredients( CAKE)
DRY INGREDIENTS
1 3/4 cups all purpose
3/4 cocoa powder
11/2 tsp. baking powder
1 1/2 tsp. baking soda
1 tsp. salt
WET INGREDIENTS
2 cups sugar
2 eggs
11/2 tsp. vanilla essence
1 cup milk
2 tbs. melted butter
1 cup boiled water
PROCEDURE
Sift all the dry ingredients ; 1/3/4 cups all purpose flour , 2 cups sugar, 3/4 cup cocoa powder , 1/1/2 tsp baking powder , 1 tsp baking soda into a bowl ( This step is a must to ensure that the cake is aerated .) and mix them evenly.
Whisk together all the wet ingredients using an electric hand mixer.
(If you do not have a hand mixer ; beat the eggs separately with a fork until smooth ad white in colour; this helps the cake not to taste eggy once done . once done add in your wet ingredients; 1cup milk , 2 tbs melted butter , 1 cup boiled water, 1/1/2 tsp vanilla essence and beat until smooth and all the sugar is well combined.)
Note: Add in your hot water slowly as you mix to prevent it from cooking your egg.
Add in your dry ingredients to your wet ingredients and mix until smooth with no lumps .
TIP: Beat the cake mix with a fork until bubbles form before putting the cake into the oven to further aerate the cake.
Grease 2 baking tins with butter or oil and line them with parchment paper .
If you don't have parchment paper grease baking tray with butter/ oil and dust with cocoa powder ( since this is a chocolate cake ) and pat out the excess cocoa powder.
Transfer your cake mix into 2 baking tins , and fill them halfway - 3/4 way up.
Bake your cake in a pre -heated oven at 180 degrees celsius / 356 degrees fahrenheit for 40- 50mins.
After about 45 min check whether cake is ready by dipping a toothpick to several parts of the cake especially in the middle . If the toothpick comes out clean remove from the oven and leave to cool on the counter while still in the baking tin for 10 min before transferring the cake to cool on a rack for 45 min or until cake is completley cool.
Tips.
If the toothpick comes out with some wet cake mix leave to bake a little longer and keep checking after every 10 mins and test with a toothpick until it comes out clean
However if the cake seems raw ( when you dip toothpick and comes out wet in many areas) cover with tin foil tightly with the dull side facing up and the shiny side facing the cake and bake , checking after every 10 min for progress until done . ( The foil helps cook the cake on the inside .)
SUGAR SYRUP
Ingredients
1 cup sugar
1/2 cup water
Procedure
Boil water and sugar until all sugar is dissolved and leave to cool aside .
Cut the cake horizontally in half and poke several tiny holes on both halves . Using a spoon drizzle sugar syrup over the cake about 5 - 10 times to soak it . It should look like the image below once done.
CHOCOLATE GANACHE
Ingredients
4 cubes dark chocolate compound
1/2 cup heavy cream
5 tsp. cocoa powder
Procedure
Heat up 1/2 cup heavy cream and pour over chocolate . Leave until chocolate begins to melt and stir until all chocolate is melted . Heat over low heat in a sauce pan and add in your cocoa powder.
Stir until everything is well combined and set aside to cool for a while on the counter.
Once cool; spread your chocolate ganache over the bottom half of the cake and mount the top half of the cake on top .
If the top part of your cake is not nice and flat; thinly slice a part of the top layer with a sharp knife so that you have a flat surface to ice your cake.( This should be done before cutting your cake horizontally in half.
Once your top surface is flat; add your chocolate ganache to the center ad spread it around evenly. You may decide to ice the whole cake if you'd like to but i decided to only ice the top since we already have a layer of chocolate ganache in the middle.
Sprikle some chocolate shavings on top and let the cake sit in the fridge for at least an hour before serving!
