I absolutely love chocolate chip cookies. They are my favourite cookies in the world! the perfect chocolate chip cookie to me is one that's crisp on the outside but chewy in the center and one which you get a burst of chocolate in every bite. This recipe gives you just that and more! The addition of desiccated coconut adds a nice light touch of mild coconut flavour! These cookies are perfect for anytime of day and stay soft and chewy at the center without drying! Let's get started!
PREP TIME: 5 MIN
CHILL TIME: 50 MIN
BAKE TIME: 12-15 MIN
INGREDIENTS
DRY
1 and 3/4 cups all purpose flour
1 tbs cornstarch
1/2 tsp salt
1 tsp baking soda
WET
1/2 cup granulated white sugar
1 cup dark brown sugar
1 tsp vanilla essence
1 cup melted butter
2 eggs
TOPPINGS
1 cup chocolate chips
1/2 cup chocolate chunks
1-2 tbs desiccated coconut
PROCEDURE
-Sift all the dry ingredients into a bowl. Set aside.
-Whisk your sugars, vanilla and butter for 1 min using a fork or a hand/ electric whisk.
-Add in your eggs and whisk for 1 more minuite.
-Add your dry ingredients into your wet ones and mix in with a wooden spoon till combined.
-Add in your chocolate chips, chocolate chunks and desiccated coconut. Combine evenly.
-Refrigerate dough(covered) in the fridge for 30 min.
-Scoop out cookie dough using a tablespoon and ice cream scoop an roll into balls. Place cookie dough balls on a baking tray lined with parchment paper. Refrigerate for 20 min. Pre heat the oven to 180 degrees C/ 350 F.
- Bake cookies for 12-15 min until golden brown. Cool on a rack until completely cool and enjoy!
