INGREDIENTS
5 medium sized yellow / white onions
Bowl of ice water
2 cups all purpose flour
2/3 cups corn flour
1/1/2tbs baking powder
1/1/2 tsp salt
1/2 tsp black pepper
1/4 tsp Cayenne powder
2 cups Cold soda water
Vegetable oil for frying
PROCEDURE
Peel, wash and chop your onions into thin rings.
Soak your onion rings in ice water for 10 min.
Remove onion rings from water and pat them dry.
Whisk together all your dry ingredients in a bowl. Whisk in your soda water. Let the batt sit for 10 min.
Heat up enough vegetable oil in a pan to cover it halfway.
Dip your onion ring in the batter one at a time. Drip off the excess batter and place into hot cooking oil to deep fry. Only fry a few at a time for the perfect crisp onion rings.
Fry for 3-5 min until golden brown and firm. Remove from oil and place on paper towels to absorb any excess oil. Enjoy hot with some ketchup or ranch.
