FLUFFY BANANA PANCAKES


What’s your quick breakfast go to? For me it’s cereal or leftover dinner but when I’m feeling spicy I like making pancakes. This banana pancakes are super fluffy, flavourful and they also smell really great.. almost smells like baking banana bread which I absolutely love!

PREP TIME: 5 MIN
COOK TIME:3- 4 MIN (Per Round)

INGREDIENTS

(Wet)

2 ripe bananas

1 egg

1/1/2 cups buttermilk

2 Tbs butter/margarine/ vegetable oil

1 tsp vanilla essence (optional)

( Dry )

1 cup all purpose flour

Pinch of salt

2 tsp baking powder

1/2 tsp cinnamon powder

1 tbs granulated white sugar


extra butter/ vegatable oil for cooking

Pancake syrup(optional)

Extra bananas/fruit for toppings ( optional)


PROCEDURE

Mush up your bananas into a paste using a fork/potato masher.

Whisk your remaining wet ingredients and add in your banana paste.


In a separate bowl whisk together all your dry ingredients.

Gently mix in your wet ingredients into your dry ingredients till just combined. ( Mixture should be quiet lumpy)


Heat up a heavy base non-stick pan/ cast iron pan and add a dollop of butter or a small dash of oil.

Scoop of your pancake butter and pour onto the center of your pan. Leave to cook until air pockets begin to form on top of the batter. Flip and cook on the other side for 2 -3 min. Repeat the same until all the batter is used up.


Serve with chopped up fruit and syrup if desired. Enjoy!
