I absolutely love marinara sauce! The mother of Italian sauces. The uses of this sauce are endless; pizza sauce, pasta sauce, lasagna sauce, burger sauce, a dip for your snacks etc literally anything! This recipe is not only simple but is fresh and free from all those chemical preservatives you find in store bought marinara sauce. Plus did I mention it's cheaper! Let's get started!
MAKES 500ML / 0.5 L
INGREDIENTS
-8medium sized grated tomatoes
-1 medium sized white/ red onion finely chopped
- 5 garlic cloves finely chopped
- 1/2 tbs dried oregano
-1/4 tsp chilli flakes
- 1 tbs dark brown sugar
-5-8 fresh basil leaves
- 1cup water
- salt and pepper to taste
-2 tbs vegetable oil
PROCEDURE
-Heat up vegetable oil in a large pan. Add in your finely chopped onion and garlic.
Sprinkle a pinch of salt to help the onions sweat. Saute' on medium heat until your garlic is golden.
Note: Do not let your garlic burn as it will become bitter and you will have to start all over again.
- Add in your grated tomatoes and give everything a good mix.
- Add in your oregano and chilli flakes. Stir everything together.
- Next stir in your dark brown sugar. Dark brown sugar helps to cut the acidity of your tomatoes.
- Finally add in your water and fresh basil leaves. Stir everything once more. Leave to simmer down 20 min on low heat.
Leave to cool and package in airtight containers and store in the fridge until ready to use. Good in the fridge for upto 1 week. It is however best served fresh!
This sauce can be used to make pasta dishes such as lasagna, marinara pasta, it can be used as a pizza sauce, burger sauce and even a dipping sauce from your fries and other snacks!
