GRILLED CHICKEN MSHIKAKI RECIPE(A KENYAN CHRISTMAS SERIES)


You know what’s better than chicken? Chicken on a stick ! .... I absolutely love chicken mshikaki and today you all get to try out one of my favourite ways to prepare it. Soo simple!

{Recipe makes 10-12 Mshikakis}
INGREDIENTS:

•800-1kg boneless skinless chicken breast

(Marinade)

•1 tbs lemon juice/ACV/white vinegar

•1&1/4tsp salt

•1/2tsp black pepper

•1 heaped tablespoon each of coriander powder, Garam masala, turmeric and paprika

•6-8 minced garlic cloves

•1 tbs grated ginger

•1 tbs brown sugar/honey

•1 cup maziwa mala( sour milk/ plain yoghurt)

•1&1/2 large green bell pepper chopped into squares

•1 large white onion chopped into squares

PROCEDURE:

- Chop your chicken breast into medium sized cubes( not too small to avoid drying)

- drizzle some lemon juice/ACV/white vinegar over the chicken. Season with Salt & pepper and add all the remaining marinade ingredients

- Combine your marinade & chicken with your hands until well incorporated. Marinate in the fridge for at least 1 hour. Marinate overnight for maximum flavour

- If marinated overnight set the chicken on the counter for 20 min before grilling so that it isn’t too cold

- if you plan on grilling over open flame or in the oven soak the wooden skewers in water for 20 min to prevent them from catching fire.

- Heat up oven/ grill and grill on both sides until cooked( Approx 8 min per side on a hot open grill)

If using oven pre heat to 200 degrees C and turn on the grill setting to direct heat coming from top. Grill them on an oven rack for 8-10 min a side or until we’ll cooked. Baste with remaining marinade for maximum juiciness!

Rest for 5 min &Serve hot!
