LEMON & HERB CHICKEN DRUMSTICKS


If you know me well you’ll know that I am a huge lover of chicken!
Why?
It’s one of the most versatile foods and it’s absolutely yummy ! The possibilities are endless! This week we learn how to make some juicy lemon and herb chicken drumsticks that will ha everyone begging for more.
This recipe uses fresh herbs; rosemary, thyme, dania/cilantro. Dried herbs from Italian seasoning ( mixed herbs) Lemon juice as well as lemon zest. What makes this recipe even more incredible is the use of honey! It adds a subtle sweetness flavour playing on a sweet and sour flavour profile not to forget the beautiful glaze it adds to the chicken! The chicken is marinated for at least 2 hours to allow the flavour to penetrate through the chicken. I’d however recommend if you have the time to marinate it for 8 hours to overnight. The flavours that will shin through are phenomenal! This recipe was in collaboration with Gilly from Tudishi Photography.
Now that we know what to expect let’s get started!
PREP TIME: 5MIN
MARINATION TIME: 2+ HRS
COOK TIME: 30-40 MIN

INGREDIENTS

1 Kg chicken drumsticks

salt and pepper to season


MARINADE

Juice of 1 large yellow lemon

zest of 1 yellow lemon

1/4 cup vegetable oil

2 tbs honey

4 fresh rosemary sprigs chopped/ crushed

6 fresh thyme sprigs chopped/ crushed

Dania/ cilantro leaves from 6 sprigs chopped/ crushed

1 tbs Italia seasoning/ mixed herbs

4 garlic cloves finely chopped


PROCEDURE

- Season your chicken in a large bowl with salt and pepper.

- In a separate bowl whisk together your marinade ingredients.


-Add your marinade to your chicken drumsticks. Rub in your marinade into the chicken until your chicken is well coated, don’t forget to get the marinade under the chicken skin. -Cover your chicken with cling film and marinate in the fridge for at least 2 hours .

- Once chicken has been marinated, remove from the fridge and pre heat your oven to 180 degrees C/ 360 degrees F for 10 min.

- Place your chicken on a non stick oven tray and place into the oven on the middle rack. Bake for 30- 40 min until the chicken is golden brown and cooked through.


- Serve and enjoy with a pairing of your choice! These drumsticks would go well with mashed potatoes, roast potatoes, chips or rice!
