LEMON & POPPY SEED CAKE WITH CREAM CHEESE FROSTING


I finally turned 20! I decided to treat myself to a nice home baked cake. This was by far the best cake I’ve ever eaten. It was soo fresh and tasted soo natural. And guess what? I made my own cream cheese from scratch . I think I’ll keep that as my secret ingredient in case I start a food business *hint hint* . The Lemon flavour really stands out as I used lemon zest, Lemon juice as well as lemon essence. I made sure to use no fancy equipment so that everyone else can make it as well!

TOTAL PREP TIME: 15 MIN
BAKE TIME: 30- 40 MIN

INGREDIENTS(CAKE)

(DRY)

2/3/4 cups all purpose flour+ 4 tbs corn starch or 2/3/4 cups cake flour

2 tsp baking powder

1/4 tsp baking soda

3/4 tsp salt

Zest of 1 yellow lemon

1/4 cup poppy seeds

(WET)

1/3/4 cups granulated white sugar

3/4 cup unsalted butter(Softened)

1/4 cup vegetable oil

4 large eggs

1/3/4 cups buttermilk

2 tbs lemon juice

1 tsp lemon essence

1 tsp vanilla essence


Golden syrup( glaze)


INGREDIENTS(CREAM CHEESE FROSTING)

3/4 cups butter(softened)

1/2 cup cream cheese

1/2 tsp lemon essence

1/2 tsp vanilla essence

1 cup powdered sugar

zest of 1 yellow lemon


PROCEDURE

Sift your flour, salt, baking powder and baking soda into a large bowl. Add in your poppy seeds and lemon zest. Whisk everything together.

Cream together your softened butter and sugar and mix in your vegetable oil.

Whisk in your eggs on at a time. Add in your lemon juice, vanilla essence and lemon essence and whisk.

Add in half of your wet ingredients to your dry ingredients as well as half of your buttermilk. Whisk together.

Add in the remaining wet ingredients and buttermilk and whisk.

Transfer your cake batter equally into 2 round 10 inch baking tins which have been greased and lined with parchment paper.

Bake for 30-40 min until cake is golden on top and a skewer inserted in the center comes out clean.

Leave cake to cool.

Once cooled transfer your cake to a cooling rack to cool completely. Brush over some golden syrup on both sides of your cakes.


Once your cake has cooled completely begin to make your cream cheese frosting frosting.

Whisk together your cream cheese, butter and powdered sugar. Add in your lemon zest, vanilla essence and lemon essence and whisk together till well combined.

Level your cakes and spread your frosting on top of your first layer of cake. Add your second cake on top and spread your second layer of frosting as well as onto the sides.

Decorate as desired.

leave cake to chill in the fridge for 30 min before serving to set your frosting.
