I absolutely love love this dessert! I find sorbets to be very refreshing and a simple dessert to make . You really can have fun with sorbets; experimenting with different fruits , colours and flavours for a nice creamy dessert!
The quality of a sorbet lies in the quality of fruit used to make it , even with the best of recipes ; if the fruit used is not of impeccable quality the sorbet wont rise to the occasion. As a result of this make sure to carefully pick your fruit using the following tips:
1. Make sure that the fruit used is ripe or even very ripe ( not to be mistaken for spoiled) The riper the fruit , the sweeter the sorbet will be.
2. Pick fruits that are currently in season ! It can be super frustrating going around looking for a good quality fruit if the fruit is not in season, so to spare yourself this trouble work with the season.However if you really want a specific fruit sorbet but the fruit is not in season there are a few stores that sell imported fruit such as ZUCCHINI , and ADAMS ARCADE. This fruits are however more costly and it's not a guarantee that they will always be of good quality during off season .
3. Pick fruits that are rich in fiber such as mangoes, bananas, pineapple, peach etc. The fiber helps to form a nice and creamy sorbet!
Now that we know how to pick our fruit we can move on to making a sweet and simple sorbet.
The kind of sorbet we are making today is a no churn sorbet recipe which does not require an ice cream machine . It's very easy to follow and make it on your own. Lets begin loves!
(PREP TIME - 15 min)
(FREEZING TIME - 2 hours )
(TOTAL TIME - 2 hrs 15 MIN)
SERVES 3
INGREDIENTS
- 3 ripe mangoes
-3 lemons
-5 tsp. honey
-5-10 mint leaves
PROCEDURE.
Peel off the skin from your mangoes , slice them into medium sized cubes and place on a baking tray lined with parchment paper .
Freeze your mango cubes in the freezer for at least one hour .
As the mango cubes are freezing we can move to the next step.
Juice out the juice from your 3 lemons , add 1/2 a cup of water and 5- 10 mint leaves.
set in the fridge for an hour for the mint flavour to seep in .
After about an hour strain out the juice into a jug to remove the mint leaves .
Once mangoes have been frozen and the lemon and mint has chilled in the fridge ; combine them both in a food processor / blender .
Add in your 5 tsp. of honey and process under high speed. You may stop every so often to turn the mixture with a spoon to ensure there are no lumps and all the fruit has been Processed .
Transfer the mixture into a cold, medium sized , metallic bowl or baking dish and spread out evenly .
Cover with cling film ( making sure the cling film touches the mixture so that ice crystals are not formed in the sorbet. This ensures that the sorbet remains nice and creamy, almost like a soft ice cream consistency)
Freeze for one more hour, garnish to your liking and serve!
