Happy new year! Welcome to 2020! i know that a lot of us have a bunch of new years resolutions and things that we want to improve on this year right? Well me to! One of the things I have on my agenda is to eat more vegetables especially in their raw form. What better way to do this than through healthy crisp salads. To kick off this first Sunday of January we will be making a simple red apple garden salad which you can enjoy on its own or serve as a side to a number of dishes such as pork, chicken, roast potatoes etc.
The key to a good salad is a good dressing, crisp veggies and a variety of textures. This recipe has a good balance of textures from the free leaf lettuce to the crisp cucumbers and apple to the soft and chewy raisins! Incorporating of the apple juice to the salad dressing further enhances the apple flavour in the salad and the oregano and dill add a nice freshness to it! Let's get started!
INGREDIENTS (SALAD)
1 large carrot grated
1 large cucumber thinly chopped
2 large red apples cubed/ thinly sliced
1 cup raisins
2 cups loose leaf lettuce
Bowl of salty water
Juice of one lemon
(DRESSING)
1/4 cup lemon juice
1/2 cup apple juice
1 cup vegetable/ olive oil
1 tsp dried oregano
salt and pepper to taste
(GARNISHES)
Fresh dill( optional)
PROCEDURE
Clean your vegetables and apple and soak in salty water for 10 min before chopping. This helps in sterilization.
As your veggies and apples are soaking, combine all your salad dressing ingredients and store in an air tight container. Keep refrigerated until needed. Dressing can be stored for up to 3 days in the fridge!
Chop up your veggies as instructed in the ingredients and place them in a large clean bowl.
Squeeze the juice of one lemon over your salad to prevent your apples from turning brown.Drizzle over some of your salad dressing to your liking. Gently toss everything together using salad spoons or tongs. Garnish with fresh dill (optional) and enjoy fresh!
