In this crazy cold nights in Nairobi all you need is a yummy and simple soup to keep you warm and toasty. I love pumkin soup because it is so rich in flavour and naturally smooth and creamy! This recipe uses simple Natural ingredients to help you beat the cold. Let’s get started!

INGREDIENTS
1kg pumpkin
4cups chicken stock (4cups warm water+ 2 chicken seasoning cubes)
1 large red onion chopped
Handful dania/coriander stems
4garlic cloves minced
1 tbs freshly grated ginger
small pinch salt
2tbs vegetable oil
PROCEDURE
-Peel the skin off your pumkin. Cut your pumpkin into medium sized cubes and set aside.
-In a large cooking pot, sauté your onions, garlic, ginger and dania/coriander stems till soft and fragrant.
- Add in your chopped pumpkin cubes and mix everything evenly.
-Pour in your chicken stock , stir and cover your pot . Leave to simmer on medium heat for 10-12 min until your pumkin has cooked and softened. Taste for salt and adjust to your liking.
-Once cooked leave to cool down a bit before you blend.( If you blend when too hot you may damage or spoil your blender.)
-Once cooled, blend in 3-4 batches until smooth and creamy.
-Once everything is blended, re-heat your soup in a pot and enjoy!
