I haven’t had Evening tea in a long while but with all this extra time on my hands I decided to make my favourite tea accompaniment MANDAZI! I love using spices such as cardamom, nutmeg and cinnamon in my Mandazi to give it that extra yummyness . Using coconut milk in place of cows milk or water adds further depth of flavour to your Mandazi as well as a subtle coconut sweet scent.
Lastly a good Mandazi has to be soft. Always ensure to use a good leavener as well as ensuring your dough is supple and not dry.
Here’s something you can enjoy with your tea!
PREP TIME: 10 MIN
REST TIME: 30 MIN
COOK TIME: 3-5 MIN PER ROUND
INGREDIENTS
31/2 cups all purpose flour + more for dusting
1/1/2 tsp baking powder
1/1/2 tsp cardamom powder
1 tsp cinnamon powder
1/4 tsp nutmeg
1/2 tsp salt
1/2 cup white sugar
1 beaten egg
1/1/2 cup coconut milk/ milk/ water
Enough vegetable oil to deep fry
PROCEDURE Whisk all your dry ingredients in a large bowl.
Add in your beaten egg and coconut milk. Mix together till a sticky dough is formed.
Dust a clean flat surface with your flour. Transfer dough onto dusted surface. Knead well until a smooth supple dough is formed. Cover with a clean cloth and leave dough to rest for 30 min.
Dust your surface again with some all purpose flour and roll out your dough. Cut your dough into your desired shapes. Deep fry in heated oil until golden brown.
Serve with tea or coffee!
