Sweet and spongy carrot cake cupcakes!

Let me start by saying how much fun iv'e been having lately in the kitchen! Despite how exhausting it can be to cook for a full house of hungry stomachs; there is nothing more rewarding than your recipes being shared and enjoyed widely. I created this sweet , spongy carrot cake after watching one of my favourite food bloggers "The Joy of baking" and just being inspired to try this recipe and add my own style and pizas! Ordinarily, carrot cake is served with a delicious cream cheese frosting but I chose to just have them plain this time because they were equally as amazing on their own!They say pictures speak louder than words so from the picture above you can imagine how amazing they came out! I'll let them do the talking! Let's get started!



INGREDIENTS

1 1/4 cups of all purpose flour

1 tsp. cinnamon powder

1 tsp. baking soda

1/2 tsp. baking powder

1/2 tsp. salt

1/4 cup rains

2/3 cup sugar

2 large eggs

2/3 cup vegetable oil

3/4 tsp. vanilla essence

1 large carrot, finely grated

1 red apple finely grated/ pureed


PROCEDURE.

Lightly Whisk your 2 eggs in a bowl and add in your sugar, vegetable oil and vanilla essence. ( The vegetable oil helps the cake to attain a moist texture.) Next add in your finely grated carrot, apple puree and raisins and give the mixture a good stir to ensure everything has been incorporated evenly.





In a separate large bowl, sift in your all purpose flour,baking soda, baking powder, cinnamon powder and salt.Mix all this dry ingredients evenly.

Make a well at the center and gradually start adding in your wet ingredients as you mix. Do this until all your dry and wet ingredients are well mixed. The cake mix should be at a thick consistency as the one shown below. You may add a few tablespoons of milk if you find your cake mix is not at the desired consistency.


Line your cupcake moulds and fill them about 3/4 way up or so depending on how big you want the cupcakes to be.( Try as much as you can to fill them equally so that the bake evenly and have similar sizes.)

Pre-heat the oven to 180 degrees celsius/350 degrees Fahrenheit and bake for 15-20 min in the middle rack of the oven.






Test to see whether the cupcakes are done by inserting a toothpick into the center of one. If the toothpick comes out dry they are ready. If the toothpick comes out with some liquid cake batter leave to bake for about 5 more min.

Leave the cakes to cool on a rack for at least 15 min before serving. Enjoy your cupcakes however you'd like!
