I absolutely love anything fried to be honest! I can say i have a soft spot for savoury food. I believe a lot of you love irish potato fries but have you heard of and tried sweet potato fries before? Recently a lot of craze has been going around about sweet potato fries and how they are a better alternative to regular fries. How true is this ? According to my research I came to the conclusion that it's not about the food but everything to do with how you prepare the food. Frying sweet potatoes will make them easily as unhealthy as fried irish potatoes. Alternatively, baking either variety is a much healthier option due to minimum oil used compared to the deep frying method. Another advantage of baking as compared to frying is that you can season your food more without a lot of the ingredients being lost in a sea of oil!
However questions arise about how to make baked dishes crispy like their fried counterparts; read on and find out how I managed to get the perfectly seasoned and crispy sweet potato fries!
INGREDIENTS
2 large sweet potatoes/ 4 medium-small sweet potatoes
1/2 tsp. kosher salt
1 tsp. pepper
1 tsp. chilli powder
1 tbs. dried rosemary
2 tbs. vegetable oil

PROCEDURE
Firstly, start with washed clean potatoes and peel off the skin. (You can opt to keep the skin on if you'd want to.) Sweet potatoes can be quite challenging to cut into pieces so brace yourself! To make the cutting process easier you can use a potato cutter but if you don't have one here's what you can do; start by cutting your potato into half and then cutting your halves into halves and so on and so forth until you have some thin circular circles. Next cut your circle pieces into chips ( The thinner your pieces, the quicker they cook and the crispier your fries will be!)
Tip: To save yourself from having the difficulty of cutting up raw sweet potatoes especially if you do not have a potato cutter; use smaller sized potatoes instead of the large ones.
Once you have all your pieces cut place them in some cold water to reduce the starch content and also to prevent them from drying due to exposure to the air. Strain out the excess water and pat your potatoes dry with some paper towels.
The next step is to season your potato fries. I wen't for the following seasoning combination; salt, pepper, chilli power , dried rosemary and vegetable oil. When it comes to seasoning there are endless possibilities and combinations you can try out, get creative!
Rub in all your seasonings with your potatoes until everything has been evenly coated.
Pre-heat the oven to 180 degrees celsius / 356 degrees Fahrenheit . Grease the bottom of your tray with a little oil to prevent sticking and spread out your fries in one single layer. Bake for 15 min on the middle rack of the oven. Once the 15 min are done sprinkle a little salt on top of your fries and transfer the tray to the highest level of the oven and bake for the remaining 5 min or so. This helps you achieve nice crispy sweet potato fries.
Remove your sweet potato fries and transfer them to a plate and serve with whatever you fancy! I had mine with a home made chilli dipping sauce and some honey pork skewers!
