SERVES 3
INGREDIENTS
1&1/2 cups basmati rice
2& 1/4 cups chicken stock
1/4 tsp. salt
1/2 red onion minced
4 crushed garlic cloves
1 tbs. turmeric powder
Vegetable oil
Chopped coriander(Dania)
PROCEDURE
-Soak your rice for 10 min in cold water before cooking. This helps to reduce the starch content which can cause soggy or sticky rice. Strain out the water and set your rice aside.
-Heat up about 1 tbs vegetable oil in a non- stick pot or sufuria and saute' your onions and garlic until fragrant.
-Add in your salt and turmeric powder and mix in evenly.
-Next add in your basmati rice to your pot/pan/sufuria and mix in evenly with the onions, garlic and turmeric.
-Add in your chicken stock, stir and simmer under low heat for 3-4 min. Cover with a lid and continue to cook on low heat for 10-12 min. Once cooked, remove from the heat and keep covered for at least 10 min before serving.
-Garnish with dania/coriander leaves and serve!
This recipe would go great with my; garlic and thyme meatballs, Jamaican jerk chicken, BBQ chicken or herby ndengu curry.
